September 30th Menu

The weekend is almost here and I can’t wait to try some new recipes!  It is supposed to be cold and rainy which means it is time for some comfort food (made healthier of course)!  This week’s menu has some of my favorites.  The parmesan pork chops could not be easier and as long as you don’t over cook them, they are juicy and delicious.  I hated pork chops as a child, (no offense Mom) however I absolutely love these and could probably eat them once a week.  It might be because they are so easy though.  I served mine with some mashed cauliflower, a great substitute for mashed potatoes!  The chicken in white wine sauce was also wonderful.  It somewhat reminded me of a marsala, minus all of the work.  I recommend serving with egg noodles! The enchiladas are so fast to throw together, especially if you have the pre-cooked and shredded chicken sitting in your freezer.  

I highly recommend the pumpkin coffee cake!  Holy moly is it good. I modified a Williams Sonoma recipe and it was everything I hoped it would be.  While I did modify it, it is still loaded with butter and NOT one of my healthier recipes.  In case you hadn’t noticed, I would rather cut as many calories as possible on main dish items, so that I can save them for sweets! 🙂 It is something I get from my mom, who taught me that dessert before dinner IS in fact OK.  We were lucky enough to grow up coming home to cookies and brownies hot out of the oven and THE BEST cut out cookies with frosting EVER.  We even got them mailed to us when we were away at college.  Hence, my sweet tooth and something I refuse to sacrifice on.
