October 14th Menu

Have I mentioned how much I love the Fall?  I am sitting here cozied up on the couch, in front of the fire, so loving everything about this time of year.  I can’t believe how quickly the time is passing.  Before we know it, Thanksgiving will be just around the corner.  

This week’s recipes are easy and fast!  My favorite was the Sweet Potato Crusted Tilapia.  It didn’t even need the sauce! The sweet potatoes gave the fish a heartier taste, without adding a ton of calories.  The Chicken and Spinach Tortilla bake was SPICY.  If you don’t like spicy foods, I would recommend using less salsa in the ricotta mixture.  The same goes for the Chili.  I used two chipotles in adobo, plus some of the sauce.  Greg and I love spicy foods, so it was perfect for us.  I would only use one if you like things a little spicy, and none at all if you don’t do well with spicy foods.  

The Pecan Pie Bars are delicious, but very sweet.  They are great with a cup of hot coffee!
