Well it has been another slightly crazy week, however thankfully no SNOW! I can definitely do without that for another few weeks. This week’s menu included a slow cooked brisket that was easy to throw together in the morning, and perfectly cooked by the time we got home from work.
We also had a delicious Chicken and Pasta dish with a sundried tomato sauce. To re-heat the second night, I just threw everything into a baking dish, sprinkled with parmesan cheese, and baked until it was warm. (You could probably do this to start with if you wanted to).
The Thanksgiving recipes this week are my Mom’s stuffing (you could substitute turkey sausage for pork if you want) and Twice Baked Sweet Potatoes. The stuffing is something my mom has made every year for as long as I can remember and it is just one of those things that immediately takes me back to sitting at the kids table with all of my cousins at Grandma’s house for Thanksgiving. Greg and I still sit at the kids table for family dinners there 🙂 The kids are much more fun!
