Happy New Year! With many people starting their New Year’s Resolutions this week, I tried to keep the recipes to 500 calories or below. The shrimp tacos with mango coleslaw were my favorite recipe of the week. The original recipe called for mayo in the coleslaw dressing, but I subbed greek yogurt for a total savings of 200 calories and 20 grams of fat! The slaw was so pretty right before I mixed it up, I had to take a picture!
I’ve included some New Year’s Eve appetizer and drink recipes for those who are hosting or bringing something to a party. If you decide to make the shrimp, simply transport in a tupperware container and divide among glasses once you are at your destination.
