Did you know that most people have already given up on their New Year’s Resolutions? Hopefully you don’t fall into that category! This week’s menu should at least help those of you who are trying to eat healthier, while still leaving you full and feeling like you’ve had a satisfying meal. The roast beef was so flavorful and made great sandwiches the following day. The horseradish sauce packed a pretty good punch, so be forewarned! I served mine with roasted carrots (recipe in the bonus section) for a healthier option than potatoes.
The fajita quesadillas were inspired by a restaurant my brother Nick used to work for, called Salsa Latina. It is my favorite item on their menu (other than the margaritas 🙂 ) Start to finish, this recipe took me about 30 minutes. You could definitely save yourself some time by using pre-cooked, shredded chicken and chopping your veggies over the weekend.
The spaghetti with kale and lemon was a recipe I found on Pinterest. It was something different, but simple enough to make in the middle of the week. A nice crisp, white wine goes with it perfectly.
