This week was a toss up for our favorite meal. The turkey burgers with avocado fries really hit the spot. The avocado fries were delicious, and it was a nice change to have a burger in the middle of the winter. You could easily get some extra turkey and make a few extra to freeze for a busy night.
We also loved the Coconut Shrimp Curry. It was so quick to put together and full of flavor. I threw the rice on right when I got home from work and just set it aside until I was ready to use it. You could also do it the night before and then refrigerate until you are ready to use. The rest came together in about 15 minutes! Have a great weekend!
