It is hard to believe January has already come to an end. Football season is coming to an end, and before we know it, Spring will be on the horizon…OK so that may be a stretch, but here’s hoping that Punxsutawney Phil does not see his shadow on Saturday!
I made sure to include some Super Bowl Recipes for this weekend. I will admit, the Buffalo Chicken Bites are very good, but if you are looking for a quick recipe to feed a lot of people, this is not it. I would recommend these for a small gathering. I did a triple batch and it took me almost an hour to roll the balls, dip them and then bake them. That being said, it would probably only take about 20 minutes if you just did a single batch.
This week’s Tortellini and White Bean Soup was super simple to throw together and it made enough to feed us for two nights, plus lunch for me three times this week.
The Cornflake Honey Mustard Chicken started as a more complex Weight Watchers recipe, but I cut out a few ingredients and it was just as tasty. I recommend the Yogurt Honey Mustard by Bolthouse Farms. You can find it in with the other refrigerated dressings near the produce. I used chicken thighs and they took right around 45 minutes to cook all the way through.
The Carne Asada was definitely some thing new for us. I have never been a fan of steak tacos because the meat is usually too tough. Not this time! When it soaks in the marinade overnight, it breaks down and makes it much more tender. I made the marinade while leftovers were heating up and then just threw the meat in to marinate overnight. Then we just cooked for a minute or so a side and dinner was on the table in 15 minutes! Note: If you like spicy, I would add another jalapeno or serrano chile.
