February 17th Menu

Happy Valentine’s Day! I am going to keep it short so that I can go cook dinner!  This week I made Ina Garten’s Coq Au Vin which is basically a chicken in wine sauce.  It sounds a little complicated but it really isn’t.  Even with the long list of ingredients, it was a really budget friendly meal, while still coming across as impressive.  I served it with some nice bread that I toasted in the oven with a little olive oil, salt and pepper.  I was able to feed 6 people with leftovers for about 20 dollars. (The most expensive part was the bottle of wine!)  


The penne with spinach sauce was really quick and simple to throw together.  It was a great weeknight meal and would be great with chicken or shrimp as well!  

I am heading to Barbados with a bunch of my girlfriends so next week’s blog will probably be a day late!  For everyone about to go on break, I hope you have a restful and relaxing week off!
