March 10th Menu

Just when I thought Spring was on the way….sigh.  Glad I didn’t get my hopes up and make a Spring inspired menu this week! 

We started the week with Zucchini Lasagna.  It was so good and I didn’t miss the pasta at all!  The turkey sausage gives it great flavor and the zucchini actually made it feel pretty substantial rather than like it was missing something.  I highly recommend using a mandolin so that you can make sure all of your zucchini slices are the same thickness. IMG_1468


The Pork Carnitas are a great make– ahead meal.  On a leftover night, I got my pork going in the slow cooker when I got home from work.  It was done by the time I was getting ready for bed.  All I had to do on Tuesday was re-heat the pork in a skillet and serve it up!  I know that I put taco seasoning on the ingredient list, however I challenge you to make your own!  It tastes so much better, and it doesn’t have things like maltodextrin or monosodium glutamate (that’s the science word for MSG!)  like the packets from the store do.   So do yourself and your kids a favor.  Take the 5 extra minutes to prepare a batch of taco seasoning.  Store in an airtight container and feel good about yourself! 🙂 


I know the ingredient list for the tuna looks long, but they are SO easy to prepare and most of the ingredients were for the sauce, which takes about 5 minutes to throw together.  This meal takes all of 15-20 minutes and tastes like it could have come from a restaurant.  Make sure you don’t overcook your tuna.  Then it definitely does NOT taste like it could have come from a restaurant!
