March 31st Menu

Happy Passover and Easter to everyone!  This week was definitely challenging since we kept Kosher for Passover.  (OK, Greg kept Kosher and I made Kosher for Passover meals that we would both eat).  I made the ham right before Passover started so that I could try out the recipes and get a picture up.  We will also be having a Kosher Easter this year since the holidays coincide, and I wanted my ham even if it was a week early!  The glazed carrots were definitely my favorite part of the meal.  The original recipe called for 4 Tablespoons of lemon juice, but I only used two.  If you really like lemon, feel free to add more.

I also roasted a chicken mid-week.  I always feel like it takes so long to roast a chicken, but I prepped it in the morning and then it was ready for the oven as soon as I got home.  My chicken took about 1 hour and 45 minutes.  

The eggplant rollatini was my favorite meal of the week.  It was done in about 40 minutes and tasted great.  I highly recommend getting good mozzarella cheese to go on the top!
