April 28th Menu

Well May is just around the corner and we have yet to hit above the 70 degree mark.  I swear we had to turn the air conditioning on by this time last year.  In the hopes that we actually get some nice weather this weekend, the Sunday meal is a grilled pork tenderloin.  It was DE-licious.  So easy and the glaze you could really use on just about anything (or as a salad dressing).  Whatever you do, don’t skip out on the curry!  It really made the dish.


Tuesday I made Apple Cider Glazed chicken.  I guess I was in a mustard – glaze kinda mood this week.  This dish could have easily been done with pork chops as well.  Again, it was really simple to throw together on a week night and the glaze was the perfect combination of sweet and tangy.  Make sure you let it reduce down enough.  It will become pretty thick (like a syrup) and darken in color.  


Finally, I made a Spring Pea Soup with cheddar grilled cheese.  Something vibrant and if the kids like peas, a sure hit.  This pea soup maintains it’s bright green color instead of turning that dark unappealing green of split pea soup.  If you like spice, add a little cayenne pepper.  I actually chopped a little leftover tarragon that I had from last week and threw that it.  You could also dollop sour cream or greek yogurt on top if you wanted.  

You may recognize the Quick Fixes this week.  They are repeats from past menus that may not have been “Quick Fixes” before.  They still come together in 30 minutes or less. Someone reminded me of the Black Bean Turkey Burgers recently and I felt like they deserved a repeat on the menu.  So, here they are!
