May 5th Menu

I’m keeping it short and sweet this week folks. Last Sunday was one of our first nice days so we grilled some ribeye steaks and I made an heirloom tomato salad to go with it. For the salad, simply chop up some heirloom tomatoes, sprinkle with some sea salt, and drizzle with olive oil and balsamic vinegar.

Mid week I made a Spicy Thai Basil Chicken. It was delicious and very easy to make. I would double the sauce recipe if I did it over again so that there was more sauce for the noodles or rice.

Finally I made blackened grouper sandwiches. Ok, so I actually tried another recipe first and I hated it. Thankfully I got enough grouper for two nights and I just blackened it the second night. Much better and easier than the original cornmeal crusted recipe I found. You could easily do this with tilapia, cod, or another mild, white fish. You could also skip the roll if you are trying to watch the carb intake.

The weather is finally warming up and I hope everyone gets outside to enjoy it this weekend!
